My Story

Starting a food truck has been on the back burner for a few years.  Recently, I moved it to the front burner. (Pun fully intended).  After having a long stint as a high school teacher and a shorter stint flipping houses (both of which were meaningful and fulfilling) I have been working on making this next idea come to to be.  I have done my research about food preparation, permitting, equipment requirements and have arrived at a place where I have ordered my mobile unit!  

I am fully committed to this endeavor. I have invested my own money towards  60% of the startup costs. I am fundraising toward the balance I will owe on my food trailer as well as other start up costs (initial permits, inventory, and some additional equipment).  I  plan to be up and running (or rather driving) by mid Spring making fresh paninis.  The menu will be fluid and reflect not only seasonal tastes (a bruschetta panini in the summer, a turkey, brie and cranberry one in the fall) but also tastes of all ages (a straightforward grilled cheese for the youngins') and, of course a gluten free alternative for those that want or need that option. I will serve locations that include workplace lunches, community events, local craft breweries, parties, festivals, fairs, and flea markets.  The possibilities are endless and of course will grow as I do.  

I am a professional, hard-working, creative person.   I am passionate about preparing and providing tasty and healthy food (paninis in this case) and am excited about bringing that to people in my local community and region. Developing CARAVAN KiTCHEN has allowed me to be autonomous and creative while also involving my two sons (ages 14 and 10)  who are eager to help out in many ways--from starting a website and social media presence to  working the serving window for many summers to come.

I know that running a successful food truck operation will come with challenges and risks--permitting for everywhere I go,  complying with codes and regulations, and of course, making paninis that folks want to come back for. I am doing my research and have been working with the local inspectors so that  CARAVAN KiTCHEN will be up and running without any hitch (except for the one on my truck).   

And, then there's the paninis...  I'll be making them, tasting them, having others taste them, and pressing them to perfection.

Almost halfway through my fundraising campaign and I am so grateful for all the support I have received. I have been working on my online presence and now have a website (www.caravankitchenfoodtruck.com) and facebook and instagram pages, which I plan to be more savvy about using. I have also been networking with some amazing folks around marketing and developing a schedule for locations. Things are moving forward every day!
